Crostatine con ganache di cioccolato e mandorle pralinate

Ingredienti per 10 persone
 125 g. Cioccolato fondente
 125 ml. Panna fresca liquida
25 gr. zucchero a velo 
 200 g. Mandorle pralinate
Procedimento

Per le mandorle pralinate: in una casseruola fate cuocere 250 g di zucchero in 80 g di acqua, alla temperatura di circa 121 °C. Aggiungete quindi 250 g di mandorle non pelate  e mescolate il tutto con un cucchiaio di legno: via via che le mandorle graniscono diventeranno bianche,continuare a mescolare finché lo zucchero inizierà a caramellare, quindi stendere le mandorle su carta da forno e lasciarle raffreddare. Stendete la pasta frolla negli appositi stampi mono porzione e cuocere in forno,quando saranno cotti lasciare raffreddare. Preparare la ganache intiepidire la panna con lo zucchero a velo e aggiungere il cioccolato,quando è sciolto aggiungere le mandorle pralinate,triturate grossolanamente .Riempite le crostatine e lasciare raffreddare completamente. Servire a piacere.
